This is more of a summer recipe, but a few bright spring days inspired me to create this fun potato salad to go with grilled hamburgers. My husband was thrilled when I surprised him with it in the middle of the week.
I will no doubt be making it for our summer picnics and barbecues
Red and Blue Potato Salad
|4 pounds||Red potatoes, cubed|
|4||Green onions, chopped|
|1 cup||Cooked potatoes|
|½ cup||Blue cheese|
|½ tsp each||Salt and pepper|
|1 tsp||Dried dill|
|½ cup||Milk of choice (I used coconut)|
|1. boil potatoes for 15 minutes, until tender; rinse with cold water and allow to drain|
|2. prepare the sauce by combining 1 cup of the cooked potatoes, cheese, milk and seasoning in the blender and process until smooth
3. combine remainder of potatoes, green onions, and peas in a large bowl
4. fold in sauce
5. serve warm or cold.
