This is more of a summer recipe, but a few bright spring days inspired me to create this fun potato salad to go with grilled hamburgers. My husband was thrilled when I surprised him with it in the middle of the week.

I will no doubt be making it for our summer picnics and barbecues

 

Red and Blue Potato Salad   

Ingredients

4 pounds Red potatoes, cubed
4 Green onions, chopped
1 cup Peas
1 cup Cooked potatoes
½ cup Blue cheese
½ tsp each Salt and pepper
1 tsp Dried dill
½ cup Milk of choice (I used coconut)

 

Method

1.  boil potatoes for 15 minutes, until tender; rinse with cold water and allow to drain

2. prepare the sauce by combining 1 cup of the cooked potatoes, cheese, milk and seasoning in the blender and process until smooth

3. combine remainder of potatoes, green onions, and peas in a large bowl

4. fold in sauce

5. serve warm or cold.
