This morning my son asked me what I wanted for Christmas. He did so while snuggling on my lap next to the tree while his sister slept. When she woke up, he got her a blanket and read to her.

A husband who works overtime to clear his schedule so he can be fully present with this family this weekend.

These are the gifts of Christmas.

Grandparents and aunts who take time out of their busy lives to love my children.

These are the gifts of Christmas.

A loving God who sent is son to save us.

THIS is the gift of Christmas.

This year as we listened to the message and carols of Christmas service, I looked around at my family. My son was cuddled up on one side. My daughter sat on her dad’s lap. I watched as he kissed her head and she leaned between us to snuggle in. The love I felt for these people took my breath away.

This year I wish you all that same breathlessness. May you see and appreciate the blessings in your life.

Before I return to family games and movies, I have a new recipe to share with you – Chocolate Gingerbread Waffles. My kids loved this surprise holiday breakfast. I hope your families do as well.

Chocolate Gingerbread Waffles

gluten-free, dairy-free, refined sugar-free

Combine dry ingredients in a large bowl.

  • 2 cups gluten-free flour blend
  • ¼ cup cocoa powderwaffle-2
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 1 T cinnamon
  • ½ T ground ginger
  • 1/2 tsp allspice
  • 1/8 tsp cloves 

In a separate bowl combine liquid ingredients.

  • 2 large eggs
  • ¾ cup pumpkin puree’
  • ¼ cup molasses
  • 6 T melted butter
  • 1 tsp vanilla
  • 1 – 1 ½ cup milk to reach desired consistency. (this will vary depending o the brand of flour used)

Add liquid ingredients to bowl with dry ingredients and mix well waffle3


Cook in waffle maker according to manufacturer specifications.
