I love soup. it is a great way to get in nourishing bone broth and brings comfort. This recipe has been tried and approved of by my family. They highly recommend the addition of tomatillo salsa.

Cauliflower and corn chowder

Combine in a large pot:

            3 T fat (I used lard)

            2 cups  diced onion (1 large)

            3 cloves of garlic, minced

            1 cup diced celery

            1 c diced carrots

Saute’ for 5-7 min, until soft

Add:

4 cups cauliflower, cut into florets

          1 T Italian seasoning

          2 cups cubed potato

          1 red/orange bell pepper, diced

Bring to a boil and simmer 20 minutes, until vegetables are tender

Using an immersion blender, puree’ about half of the soup.

Add 2 cup frozen corn

Optional – ½ cup of coconut milk or heavy cream

Heat through and serve with bacon or tomatillo salsa (or both)
