We are well-immersed in Spring Break around here. The garden has been started, volleyball has been played over the clothesline in the backyard, and we spend a morning snuggling in bed before a lazy breakfast. I love this time of year!
For the rest of the week we will snuggle, work outside, play and enjoy each other. Lunches will be picnic or snack style and the kids will help with dinner (maybe :)). My daughter is also busy planning a tea party with her grandparents.
Next week life goes back to busy and normal with school and soccer most days. It also means I go back to figuring out breakfast ideas for school mornings.
My husband often makes the kids oatmeal, but limit that option to three days a week as I think variety is important. I also know that there are mornings (like the first Monday after break) that require something special to start the day off on a positive note. With that in mind, I have rounded up a few fun breakfast ideas that get an early morning smile from your little ones
Paleo Chocolate Waffles – I have omitted the chocolate chips and topped these with strawberries and my kids still raved about them.
Breakfast Cookies – These can be made in advance and tossed at kids on the way out the door.
The apple pancakes below take less then 10 minutes and are a great source of protein, especially when topped with a tablespoon of nut butter.
Quick Apple Pancake – makes one pancake
|½ green apple||Peeled and grated|
|1 T||Coconut oil|
|1. Heat coconut oil in a small skillet over medium heat|
|2. Combine remaining ingredients
3. Pour pancake mix into skillet and cook on each side about 3 min, until slightly brown
