I asked my daughter what recipe she thought I should write about this week. Her immediate answer was plantain nachos. This is a fun meal for the kids and the prefect addition to a Cinco De Mayo celebration. Rather than the chips fried in questionable oil we used plantains for the base. Any excuse to add a vegetable right?

Plantain Nachos

2-3 green plantains, peeled and sliced ¼ in thick
Ground beef
Chili powder, cumin, paprika and salt to taste
3 green onions, thinly slicked
1 tomato, chopped
Shredded cheese of choice (we like goat’s milk cheddar)
Coconut oil for frying

1. heat a heavy skillet over medium-high heat
2. brown ground beef then add seasonings to taste
3. remove from skillet
4. add 1-2 T. coconut oil (enough to cover the bottom of the pan)
5. brown plantains (about 2 min per side)
6. drain on a paper towel and sprinkle with sea salt
7. top nachos with meat, cheese and vegetables of choice
8. additional toppings and sides include olives, salsa and guacamole
